Kylee is one year old and she adores our furry family member, Tuggles, the dog. We love evening walks, hanging out at the beach, getting Skinny Dip frozen yogurt and enjoying time with our friends and family!!!

Freezer Meals

So, Katy and Beth have inspired me to cook for a month and then freeze my meals. This is always such a crazy time, but when it is done I am super happy for a month or until I have to do it all over again :). I thought maybe if I shared some of my yummy recipes than others would do the same and I can build up my recipe collection for freezer friendly meals. Here is what we had tonight....Brad and I LOVED it!!!

Lemon Shrimp with Parmesan Rice

Ingredients

2 c chx broth
2 c uncooked instant rice
1 lb shrimp
1/2 c green onions
2 t minced garlic
2 T butter
2 T olive oil
3 T lemon juice
1/4 t pepper
1/2 c grated parmesan cheese
2 T minced fresh parsley (I used dried parsley)

1. Boil broth. Add rice and remove from heat, let stand for 5 mins.
2. Cook shrimp, onions and garlic in butter and olive oil until done. Stir in lemon juice and pepper.
3. Add parmesan cheese and parsley to rice and serve with shrimp.

To freeze I completed step #2 and the night I served it I cooked the rice and warmed the shrimp up and added to the cooked rice. We really enjoyed it!! I served it with steamed snap peas that you also nuke so it was super easy!!!

Sounds delicious! I've always kinda wondered about that once a month cooking, just don't know if I'm brave enough to tackle it.

way to go Katrina. i've been doing this since before jackson was born...going on over 3 years now. i can't imagine going back to the "old" way of cooking. it's the best! there's just something really wonderful about looking into a full freezer! :) recipe sounds yummy...i think Anthony would like it!
